My Nanna still features in my life.. I have and use so many of her recipes. Of course many of these are so much easier to make now than they were back then ...a greater choice of ingredients, condiments etc. more accessible, but basic methods don't change greatly.

I loved, and still love, her ginger beer & still enjoy making and drinking it. This looks complicated, but after your first batch you will see that it is not difficult.

INGREDIENTS

Makes 8 X 1 L. bottles

Start by preparing the "plant".

  • 8 raisins
  • Juice of 2 lemons
  • 2 teaspoons lemon pulp
  • 4 teaspoons ground ginger
  • 4 teaspoons sugar
  • 2 cups cold water

METHOD

  1. "Feed" this mixture for 7 days with:
    • 4 teaspoons sugar
    • 2 teaspoons ground ginger
  2. After 7 days, pour into a large utensil:
    • Juice of 4 lemons
    • 4 cups boiling water
    • 4 cups sugar
  3. Stir until sugar dissolves, then add 7 litres of cold water. Strain plant through muslin into the liquid & stir. Bottle the ginger beer, leaving an air gap of at least 6 cm at the neck. Leave for 5 days before opening.

This is a very comforting drink and could ALMOST replace the excessive wine we are tempted to drink in these difficult times.
