The silly season will be here quicker than you think, which means it's all about entertaining with incredible food and Yarra Valley Dairy has come to the rescue with their crowd-pleaser, Hurbert's Hot Pot. Better than baked brie, make it for your next 'do, or treat yourself to a solo binge, no judgements here.
This recipe for baked cheese is simply divine. We promise.
Pop into the Yarra Valley Dairy and grab a YVD Hubert's Washed Rind Cow's Milk Cheese (along with any other goodies you want to stock up on and get cooking.
And if you want even more cheesy - inspiration, take a peek at their recipes on their website for more.
Preheat oven to 200 degrees. Unwrap Hubert's and place him in a ceramic or oven-proof dish. Using the tip of a sharp knife, score the top of the cheese in a crisscross pattern so the hot air can escape whilst cooking and not dry out the cheese. Scoop a very generous tablespoon of posh pickled onions (or your favourite relish of choice) over the cheese and top with the rosemary.
Place it in the centre of the oven and bake for 10-15 minutes or until the unmistakable aroma of melted cheese starts to fill the room.
Scoop into the cheesy goodness with fresh crusty bread.
