Hello All,

After a nasty experience of my youth involving a pressure cooker, in which I "redecorated" my Mum's kitchen ceiling with beetroot juice. I avoided using one for many years. However, when I was working as Food Consultant for the Geo. Foreman Company it became necessary for me to take a deep breath and reassess my attitude in order to develop recipes for their pressure cooker product!

After a few tentative attempts, I regained confidence and am now a committed and regular user! This is an easy and delicious recipe to tempt you to start if you have been hesitant.

When I developed this recipe we had staying with us a young German chef (a WWOOFER - Willing Worker on Organic Farms) who ate three and pronounced them 'brilliant'!

INGREDIENTS

Makes 6 small rich portions

  • 1 x 260g packet of Chocolate Pudding Mix
  • 1 local free range egg
  • 1/3 cup milk
  • 60g melted butter
  • 1/3 packet of chocolate chips which come with the pudding mix

METHOD

  1. Place pudding mix, egg, milk and melted butter into a bowl and mix until well blended. Lightly fold in 1/3 choc. chips from packet.
  2. Butter 6 small china ramekins and spoon in the mixture. Do not fill to the top! Place each ramekin onto a square of foil and twist tops firmly to seal...leave sufficient room for the puddings to rise!
  3. Arrange the pots in a steam basket and place into the base of the pressure cooker. Pour in sufficient water to barely cover the base of the pots.
  4. Proceed with cooking instructions for your own unit, reduce heat and cook for 6-8 minutes after pressure is reached.
  5. Carefully remove pots from unit, unwrap and serve at once with a scoop of vanilla or chocolate ice cream.

P.S Discreetly dispose of the packet and just sit back and wait for the compliments!
