Hello All, I hope you are coping with this difficult time we are all experiencing I know many people are rediscovering or discovering thecomfort and pleasure of cooking.

Pasta dishes are always popular and this is an easy one. Even less work involved if you take advantage of using a barbecued roast chicken from the supermarket!

INGREDIENTS

Serves 4

  • 200grams macaroni or preferred pasta
  • 250grams broccoli, cut into small florets
  • 1/2 barbecued or roast chicken
  • 200grams light sour cream
  • 2 TB bottled horseradish sauce
  • 2 spring onions, chopped
  • 100grams grated cheese
  • Coarsely ground pepper
  • 1/2 cup coarse dried wholemeal breadcrumbs
  • 1 TB olive oil

METHOD

  1. Cook the pasta in a saucepan of boiling lightly salted water for 8-10 minutes. Add the broccoli and cook for 1 -2 minutes.
  2. Drain pasta & broccoli into a colander and set aside.
  3. Remove meat from chicken carcass and dice.
  4. Transfer pasta and broccoli to a large bowl, add the chicken, sour cream, horseradish, spring onion and cheese. Add pepper and stir to combine all ingredients.
  5. Transfer to a baking dish, sprinkle on the breadcrumbs & drizzle on the oil. Bake for approximately 30 minutes in a preheated oven or until golden brown and crisped.
  6. Serve with a green salad and a glass of chilled Yarra Valley white wine! May be prepared in advance and cooked at meal time.
