During these hard times a little indulgence helps us through! Even those of us without a normally 'sweet tooth' appreciate a treat and this easy cake is an excellent offering.

I know there are a number of Food is Free centres dotted around the Hills now and one often sees they have "very ripe bananas" on offer! You can actually freeze the bananas to be used in recipes such as this ... or even bake a couple of cakes and freeze them

INGREDIENTS

  • 125gr butter
  • 3/4 cup castor sugar
  • 1 teaspoon vanilla
  • 1 free range egg, beaten
  • 2 ripe bananas, mashed1
  • 1/2 cups SR flour, sifted
  • 1/4 cup milk
  • 3/4 teaspoon cinnamon or mixed spices

METHOD

  1. Melt butter in a bowl, add castor sugar and vanilla.
  2. Add mashed bananas and stir well.
  3. Add egg, mix in, stir in flour, add milk and stir lightly but thoroughly.
  4. Spoon into a buttered loaf tin, bake at 170oC for approximately 40-45 minutes.

This keeps quite well... provided it isn't eaten almost as soon as it comes from the oven! (I'm about to make mine now!)
