Ann Creber's - Marlborough Pie

As we are approaching apple harvest time I was reminded of this old recipe of my Nanna's. It was popular back when I used to hold Country Cooking classes, so I thought I would share it again.

I hope you enjoy it.

INGREDIENTS

Serves 6

  • 2 1/2 -3 cups finely chopped or grated apples, peeled and cored
  • 1 TB lemon juice
  • Grated zest of 1 lemon
  • 3/4 cup light cream
  • 1/2 cup castor sugar
  • 3 TB melted butter
  • 3 free range eggs, beaten
  • I unbaked pastry shell
  • 1 teaspoon ground cinnamon or mixed spices

METHOD

  1. Sprinkle the grated apples with lemon juice, stir in the grated peel.
  2. Mix together cream, sugar, melted butter and beaten eggs. Stir into the apple mixture.
  3. Spoon into the prepared 23cm pie shell.
  4. Bake in a 450oC oven for 15 minutes, reduce heat to 325oC, sprinkle on spices and bake for approximately another 30 minutes.
  5. Serve warm or cold with ice cream or thick, pure cream.

PASTRY CASE

  • 125gr butter, diced
  • 2 TB hot water
  • 8 heaped Tablespoons SR flour, sifted
  • 1/2 teaspoon ground cinnamon

Place butter into a mixing bowl, add the hot water and mash well. Add flour and cinnamon and work well together until blended. If mixture is to be rolled, chill until firm. An easier way is to press pastry into the pie dish and work it across the base and up the sides with fingers. Any holes may be patched!
