This is another easy and quickly prepared dish which is enjoyable to eat and offers a flavour which is rather different in a chicken dish. It is also one which can be prepared in advance and cooked quickly after a day's outing.

INGREDIENTS

  • Serves 4
  • 500gr chicken fillets, skinned and cut into strips
    Olive oil for cooking
    Toasted sesame seeds

MARINADE

  • 4 TB virgin olive oil
  • 2 TB soy sauce
  • 1 TB plum sauce
  • 1 tsp nam pla (fish sauce)
  • 1 clove garlic, crushed

METHOD

  1. Prepare chicken strips. Mix together marinade ingredients, add chicken and toss well to coat. Allow to marinate for at least several hours.
  2. To cook, heat a little oil in a wok or pan, add the chicken strips (in batches, if necessary) cook through, tossing often to prevent sticking.
  3. Turn onto a serving platter,sprinkle generously with sesame seeds (also chopped parsley, if desired). Serve with stir-fried vegetables.
  4. Excellent with a Yarra Valley white wine of choice.

This is another recipe which is really great for an easy meal after a day out! Chicken can be marinated in advance, refrigerated and vegetables prepared for stir-fry and also refrigerated. Enjoy your life in the Hills and the Yarra Valley & stay safe!
