It has been a while since I shared some recipes with you, but I am back on deck and start today with a traditional snack or lunch recipe, which is one of my own favourites! Not difficult and very satisfying!

INGREDIENTS

Serves 2 (or 1 very hungry person!)

  • 60g butter or substitute
  • 60g plain flour
  • 1 teaspoon dry mustard (or prepared)
  • 150 ml beer or cider
  • 300 ml milk (fresh or long-life)
  • 1 TB white wine vinegar
  • 150g tasty cheese, grated
  • I teaspoon Worcestershire sauce
  • Pepper to taste
  • 2 thick slices of buttered wholemeal toast, cut into triangles

METHOD

  1. Melt the butter in a saucepan, work in the flour and mustard.
  2. Cook for 2-3 minutes, stirring constantly.
  3. Work in the beer or cider in small quantities, with the vinegar, whisking after each addition.
  4. Gradually add small quantities of milk and grated cheese, beating well after each addition. Continue beating until sauce is thick and smooth, stir in Worcestershire sauce and pepper.
  5. Place the buttered toast on small ovenproof dishes, pour over the sauce to completely cover the toast. Place under a hot grill until well browned & bubbling (it will smell delicious!) Serve immediately and enjoy!
