The Signature Dish

Isabella’s Beef Oyster Blade

Created by head chef Ryan Frost to showcase quality Australian beef to visitors of the Yarra Valley, the sous vide Beef Oyster Blade is unquestionably the most popular item on the menu and for a good reason.

Both dairy and gluten-free, the Beef Oyster Blade is a 16-hour slow-cooked beef oyster blade with tomato and pumpkin tagine, gremolata and smoked almonds. It pairs best with Rochford Estate ‘la Droite’ Merlot Cabernet 2020.

This sensational dish is available 7 days per week on the casual menu on weekdays and the set menu on weekends.

Chef Ryan’s been a member of the Rochford family since 2017 and has always loved bringing people together with food. When he’s out of the kitchen, you’ll find him in the back shed experimenting with kitchen scraps as part of his recently developed passion for composting and furthering the venue's sustainability.

This must-try dish will feature in the Rochford Wintertime Experience, including a wine tasting, 2-course lunch and a glass of Estate wine. It’s the perfect companion to a cosy winter afternoon at Rochford Wines.
